Happy Tuesday!
If you’re craving breakfast for dinner, or even just breakfast foods in general, this recipe will hit the spot.
Pancakes are usually made with butter. Although delicious and very classic, I recently tried making pancakes with olive oil, and found it brings a really nice flavor profile. Paired with a blueberry maple compote and some turkey bacon, it’s a killer weekend breakfast.
Leftovers of these pancakes do also reheat well the next day, or even several days later.

This is another full meal salad I made and loved. It’s got crispy potatoes, spice-heavy chicken, small crunchy pieces of celery, and a hot honey mustard dressing. Perfect for lunches throughout the week, or for a nice healthy & hearty lunch on a Saturday.
Soy Scallion Noodles with Ground beef and Veg -
It’s crazy how just a few extra ingredients can make a lazy meal feel like something intentional.
Celery and cabbage are 2 vegetables I always keep stocked in my fridge - one, because they last for forever, and two, because they are easy to add into any dish for some extra veg.
Hope y’all try this because these will be your new favorite pantry staple meal you’ll have in your back pocket for any busy night.
