What to cook this week:





Salad of the Week -
Meal prep lunches for the week are my Sweet Potato and Ground Beef Taco Salad. In the spirit of super bowl, this combo reminds me of those Fritos walking taco salads I used to have in elementary school.
Yes - I get that these are pretty different and there are only a couple of shared ingredients (Fritos are kinda hard to find these days!), but these still brought back all the nostalgia.
Swap in Fritos for the tortilla chips here to really have it hit home.
Date Night recipe -
If you’re cooking at home with a special someone this Valentine’s Day, try making my Olive Oil Poached Halibut. It’s elegant, a perfect recipe to make together with someone, and poaching in olive oil screams fancy without it actually being hard!
Easy 30 min Weeknight dinner -
Going vegetarian and creamy this week with my new recipe for creamy mushroom gnocchi. Store bought gnocchi + sautéed mushrooms, broccolini, and a easy butter, olive oil, and parmesan sauce. Add in sausage if you really want some animal protein, but I didn’t miss it!

Desserts -
This Chocolate Bark is literally the easiest dessert you could ever make. You can melt the chocolate in your microwave and customize the toppings with anything you have or want to use. I use toasted almonds, but any nuts or dried fruit work here.
White Chocolate Strawberry Puppy Chow is also very festive and delicious.
Rom Coms of 2024
Also, as Valentine’s Day is coming up, I thought it would be fun to round up a few rom coms I’ve watched over the last few months (it’s a guilty pleasure of mine :D).
They are ranked from favorite to least favorite, and you can find these on Tubi.
The Vow - Channing Tatum and Rachel McAdams are in this movie and THAT ALONE is reason enough to watch this. If you need another reason, it’s an emotional one that will for sure make you cry, and personally I think Channing and Rachel do a great job. It made me consider what it’d be like to lose my memory and fall in love with my husband again.
Playing for Keeps - I really thought I wasn’t going to pay attention to this one, but Gerald Butler kept my attention. Him + the cute soccer moms pining for him + the satisfying ending made me pretty happy with this one.
New in Town - You probably haven’t heard of this one. Really cheesy and quite cringe worthy, but I surprisingly payed attention a good amount of the time. The midwestern small town vibes were also nostalgic and cute.
The Lucky One - Not really into the whole abusive cop ex-husband situation and Zach Effron isn’t his usual charming self, but it still made me cry and the story line keeps you invested the whole time.
Safe Haven - Ok, sorry spoiler alert here. But the whole cop ex-husband came up AGAIN in this movie and as much I like Julianne Hough and Josh Duhamel, the fact that this was the second rom com that had a cop ex-husband DIE in order for the movie to resolve is kinda crazy. Yes I get that it’s a rom com with a ridiculous love story, but I really hope this isn’t representative of power tripping that happens in real life.
Anyways, go watch the Vow if you have the time this week and happy early Valentine’s day - sending lots of love and hugs to you all!
